Gallina de Punk is a new brand by David Seijas (former sommelier at elBulli) and is born from all the accumulated experience to create concepts beyond the conventional world of wine. Our creative process acquires a provocative will seeking to reach beyond known limits, rejecting dogmas, freeing ourselves from stigmas and making the established uncomfortable.
NEVERWINE is our first project, a proposal of non-alcoholic wines for all audiences, a tribute to some of Spain’s native grape varieties that we love! More than 15 years ago at elBulli we detected that around 3.5% of customers did not drink alcohol. We present our first Alc. 0% Vol. wine for all those who cannot drink alcohol or want to lead a healthy lifestyle.

Wine of a carefree character made from rigor, with a base of xarel.lo of very good quality, complemented with Malvasía de Sitges and Moscatel de Alejandría, with a fragrant and evocative nose and a dry palate. Notes of yellow Ordal peach, citrus (mandarine), orange blossom and fennel. In the mouth, Xarel.lo takes center stage, a true “rock star” from the Penedès area, aged for 4 months on fine lees. Citrus, fresh and saline, with an agile texture and great liveliness, Mediterranean herbs and the perfume of fennel appear in the retronasal. Ideal to enjoy with friends by the glass and with some snacks.
Inspired by the Japanese concept “Ikigai” “the reason to live”, this is a wine that we humbly believe is worth living.
Señorío de Beade White
To keep hold of the fantastic array of aromas from the specially-selected, hand-picked grapes, this wine was made at low-temperatures and boy oh boy are we glad it was.
The colour is pale yellow with greenish hues. For taste, think white fruit and subtle floral notes with a good whack of minerality on the finish. Pow!
With its fruity, fresh mouth feel it pairs well with steamed vegetables, or pasta topped with cheesy or creamy sauce.
Senorio de Sarria Chardonnay Navvara 2023
The history of the Señorío de Sarría goes back many centuries and is inextricably linked with that of the Navarra region. In a chronicle of the Middle Ages, it was mentioned that the Lord of Sarría joined up with King Sancho VII (the Strong) in the battle of Las Navas de Tolosa (1212). Straw-yellow colour, with green hues. Powerful fruity nose, with hints of white flowers and exotic fruits. Fresh and balanced, with excellent acidity.
